Description:
Firming agent (sequestrant), aroma enhancer, acidity regulator, carrier. Salts of hydrochloric acid E507. Calcium chloride forms solid compounds with proteins, this is desired in cheese production. In addition, E509 can control gelation with pectin (E440) or alginates (E400). Calcium chloride is also used as a firming agent in the production of fruit and vegetable products.
